How to cuddle yourself in such hard times? Pumpking soup is the answer. Visto che in casa si tende a smangiucchiare e ingrassare, vi propongo una ricetta buonissima a base di verdure e patate: la zuppa di zucca.

onion – cipolla
pumpkin – zucca
potatoes – patate
carrots – carote
evo oil – olio evo
spices (paprika, turmeric, pepper, chili pepper, ginger, cinnamon) – spezie (paprica, curcuma, pepe, peperoncino, zenzero, cannella)

mince the onion, and brown it in the oil with the spices you like

then add the pumpkin, and the potatoes

add the minced carrots too, some water and salt

let it boil for about 30 minutes, then mash it up with a blender.

Let’s all fight against this stone cold fever

I am developing a passion for chicken in a sauce of tomato and spices.

and I have lots of onions…

and onions…

so I’m gonna cook this spiced tomato sauce chicken many more times…

see previous post for the recipe of sauce. what about the chicken ? put the chicken pieces in a bowl with lemon juice, evo oil, garlic and all the spices you like: pepper, coriander, turmeric, cumin, ginger, paprika and whatever you like. Let the chicken there 1 or 2 hours, then put it in the pan where you have previously cooked the sauce and let it cook until done.

Yes, summer is zucchini and tomato time… so here are two simple recipes based on tomato sauce. The first one is a pasta dish, while the second one is a basic sauce you can use to cook many other food (meat or pasta).

Put some oil in a pan, add a little minced onion and fry, then add the zucchini pieces and cook a little, then add the tomato sauce. Cook your favourite pasta in salted water and just before it’s done, put some pieces of mozzarella in the pan

Put the cooked pasta in the pan and mix it all. You’re done.

You can make a similar sauce (with no mozzarella) and use it with pasta or to cook different kind of meat in it, for example chicken or beef.

evo oil as a base. Put some minced onion and cook very little. Then add some minced carrot (the sweetness of carrots makes it great)  and the minced zucchini (optional). Finally add the tomato sauce, a little of minced garlic and all the spices you like… for example: pepper, chili, cumin, coriander, ginger, turmeric, paprica. Remember to add a little water if it dries… you should keep it fluid. Jump into the pleasure…

We have to experiment, don’t be afraid of trying new combinations. How does that look ?

Ok, but not all you try turns out good or non tutte le ciambelle riescono col buco. I mean this chicken-ginger-nutmeg-zucchini-onion-almonds is ok, but something could be replaced and something could be better done. For example: I shouldn’t have started with onion

This is what I did, which means the order I put ingredients in the pan throughout the cooking: [questo è l’ordine in cui ho messo gli ingredienti in padella]

1. evo oil – olio evo
2. onion – cipolla
3. ginger – zenzero
4. nutmeg – noce moscata
5. zucchini – zucchine
6. chicken – pollo
7. almonds – mandorle
8. salt – sale

Problems: onion got burnt and zucchini was not the best combination of taste. [La cipolla si è fritta un po’ troppo – anche se a me piace – e le carote forse si sposerebbero meglio delle zucchine]

And this is what I should have done:

1. replace zucchini with carrots
2. evo oil – olio evo
3. ginger – zenzero
4. nutmeg – noce moscata
5. julienne carrots – carote alla julienne
6. chicken – pollo
7. onion – cipolla
8. almonds – mandorle
9. salt – sale

Ok now you know what to do. But as to me, for this evening I appreciated this, anyway.

But when you have two genius, “Upside down” is the chance for a successful improvisation (quality is bad, but performance is great!)

.: When you’ve been blessed

Mi considero fortunata. Non sono nata ricca, non sono nata privilegiata, ma sono nata amata. I was born loved and just for that reason I feel blessed. I’m not particularly religious, but hey, it’s good friday. I wish we could feel like being kind, friendly and goodhearted every day of the year, but, at least, in some special days, we can try to think and remind to ourselves the importance of kindness.

So. For people who believe, no meat should be eaten this evening. And a new idea came to me (from heaven?) : tuna and carrots balls, with a touch of ginger and parsley. Polpettine di tonno e carote, con un tocco di zenzero e di prezzemolo. At first I thought it would not work, but I wanted to try anyway and… the miracle ! Fidatevi: sono veramente buone!

80 gr tuna – tonno
1 carrot – 1 carota
1 egg – 1 uovo
grated bread – pangrattato
evo oil – olio evo
ginger – zenzero
parsley – prezzemolo

Cut the carrots in strips. Tagliate le carote a julienne.

Add the tuna, and all the other ingredients; some grated bread too. Mescolate tutti gli ingredienti, anche un po’ di pangrattato

make the balls and roll ‘em in the bread. Fate le polpette e impanatele

Poi friggete girandole almeno 2 volte. Turn twice during cooking.

I think you’ll love the taste ! Sono veramente più buone di quel che mi aspettavo. Easter Miracle !
