Yes, summer is zucchini and tomato time… so here are two simple recipes based on tomato sauce. The first one is a pasta dish, while the second one is a basic sauce you can use to cook many other food (meat or pasta).

Put some oil in a pan, add a little minced onion and fry, then add the zucchini pieces and cook a little, then add the tomato sauce. Cook your favourite pasta in salted water and just before it’s done, put some pieces of mozzarella in the pan

Put the cooked pasta in the pan and mix it all. You’re done.

You can make a similar sauce (with no mozzarella) and use it with pasta or to cook different kind of meat in it, for example chicken or beef.

evo oil as a base. Put some minced onion and cook very little. Then add some minced carrot (the sweetness of carrots makes it great)  and the minced zucchini (optional). Finally add the tomato sauce, a little of minced garlic and all the spices you like… for example: pepper, chili, cumin, coriander, ginger, turmeric, paprica. Remember to add a little water if it dries… you should keep it fluid. Jump into the pleasure…

the fact that my life is so nice and easy, while other people have a hard life, make me pause and think… does anyone remember that Europa was from Phoenicia (which means Middle East) in her mythological origins ?

According to the legend, Europa was the epitome of feminine beauty on Earth. Zeus once saw her on the seashore of Phoenicia playing with her friends. He was so captivated by her beauty that he fell in love with her and developed a strong desire to possess her. Immediately, he took the form of a white bull and approached her. The bull looked wonderful with its snow-white body and gem-like horns. Europa looked at the extraordinary animal curiously and dared to touch and later hang him because he appeared so calm to her. Later, she was somehow motivated to climb on his back.

As soon as she did so, Zeus ran to the sea and carried her all the way from Phoenicia to the island of Crete. There he regained his human form and mated with her under an evergreen tree. This was the abduction of Europa, who later gave birth to three sons of Zeus, Minos, Rhadamanthys and Sarpedon. These men were known for their fairness and became the three judges of the Underworld, when they died. In fact, Minos founded the town of Knossos and gave his name to an entire civilization, the Minoan civilization.

Zeus loved Europa so much that he showered her with three priceless gifts. The first one was a bronze man, Talos, who served as a guard to her. He was the bronze giant that the Argonauts met and killed in their attempt to shore on Crete. The second was a dog, Laelaps, which could hunt anything she wanted. The last one was a javelin that had the power to hit the target, whatever it was. Europa was later married to one of the kings of Crete, Asterius, who adopted her sons and made her the first queen of Crete.

It is said that when Europa died, Zeus transformed her into a star complex and he himself took again the shape of the white bull to merge in the complex. The Taurus Constellation is believed to be the form of Zeus. Today the name Europa has been given to one of Jupiter’s 16 moons and in fact this moon is very special, as it is believed to have water on its surface.

.: Steep cliffs

I live in a grassy plain region. But I feel like I’m among steep cliffs. Sometimes I feel on the edge of something dangerous… like a tightrope walker I try to keep a balance, but the void is there and looks into your eyes…
Sometimes you need to plunge into something new and let things go.

So this is something new, unusual, completely messy, but tasty.
Zucchine
Onions – cipolle
evo oil – olio evo
Minced meat (beef and pork) – carne macinata (manzo e maiale)
Asiago cheese
Breadcrumb – pangrattato

Cut zucchini and onions in thin slices, mix the breadcrumb and the meat.

Cook the zucchini (a bit more) and the onion in a pan with some oil, then add the meat.

In the end add the Asiago in small cubes and let them melt a bit.

Sometimes you have to jump into the unknown and taste it.

Why this video ? Because tuna is pink, and I chose farfalle as my pasta today. That’s it.

Prendete le farfalle, tagliate una zucchina a pezzettini e rosolatela, poi aggiungete il tonno e un po’ di pomodoro.

Cook pasta in salted water. In a pan brown some chopped courgette in evo oil, then add some tuna and a bit of tomato sauce. If you want to make it more tasty, you can add some chopped onion, but be careful: courgette need some time to get done and onion can burn quickly.

We have to experiment, don’t be afraid of trying new combinations. How does that look ?

Ok, but not all you try turns out good or non tutte le ciambelle riescono col buco. I mean this chicken-ginger-nutmeg-zucchini-onion-almonds is ok, but something could be replaced and something could be better done. For example: I shouldn’t have started with onion

This is what I did, which means the order I put ingredients in the pan throughout the cooking: [questo è l’ordine in cui ho messo gli ingredienti in padella]

1. evo oil – olio evo
2. onion – cipolla
3. ginger – zenzero
4. nutmeg – noce moscata
5. zucchini – zucchine
6. chicken – pollo
7. almonds – mandorle
8. salt – sale

Problems: onion got burnt and zucchini was not the best combination of taste. [La cipolla si è fritta un po’ troppo – anche se a me piace – e le carote forse si sposerebbero meglio delle zucchine]

And this is what I should have done:

1. replace zucchini with carrots
2. evo oil – olio evo
3. ginger – zenzero
4. nutmeg – noce moscata
5. julienne carrots – carote alla julienne
6. chicken – pollo
7. onion – cipolla
8. almonds – mandorle
9. salt – sale

Ok now you know what to do. But as to me, for this evening I appreciated this, anyway.

But when you have two genius, “Upside down” is the chance for a successful improvisation (quality is bad, but performance is great!)
