I love making my bread-and-cheese “things” whenever I make my weekly bread.

you just have to do the usual batbout bread and put you favourite cheese inside.

and the cheese will melt…

you can do these for a quick dinner with friends too. And I do the rest as regular bread

I often wonder: is music over ? I ask myself this question because so many singers today make covers. As a matter of fact there are only 7 keys and you can’t create infinite melodies with a finite number of keys. Quel che mi meraviglia è che continuo a scoprire meravigliose canzoni che non ho mai sentito, solo grazie al fatto che qualcuno ne fa una cover. Be’… forse le note sono solo 7, ma le emozioni sono infinite.

It’s pretty much the same with cooking. You can’t make infinite combinations, and sometimes the classic recipes are so great that you can’t change them so much.

This is the simple panna e salmone * cream and salmon. I very rarely use cream, because it tends to hide flavours, but this is an exception. And recipe is elementary. You can even skip the browned onion step if you like

Just cook the salmon a very bit and add the cream. Fate semplicemente rosolare poco il salmone (che è già affumicato) e poi aggiungete la panna, che non va cotta, ma solo leggermente riscaldata, spadellando la pasta. Finally put the (previously cooked in salted water) pasta in the pan and blend

Of course it’s a very delicate taste. I only add a bit of pepper.

Ready for a soft, white food and a “hard, dark” thought ?

The free will theorem of John H. Conway and Simon B. Kochen states that if we have a free will in the sense that our choices are not a function of the past, then, subject to certain assumptions, so must some elementary particles.

Well… looking at the double-slit experiment, actually makes you think particles might have free will. In fact quantum mechanics seems to violate locality.

On the others side…  (human side)

Free will might be an illusion created by our brains, scientists might have proved.

Humans are convinced that they make conscious choices as they live their lives. But instead it may be that the brain just convinces itself that it made a free choice from the available options after the decision is made.

In sostanza, ci sembra che le particelle possano avere un loro “libero arbitrio”, mentre quello degli umani potrebbe essere un’illusione.

Entanglement. Coinvolgimento. Legame. Forse tutto nell’universo è un misto di interazione e casualità, di destino e di scelta. Maybe everything in the universe is a mixture of interaction and randomness, destiny and choice, order and chaos.

Must be for that we have such different ideas, and we can change our mind, and we can love what was before hated or neglected, and we can neglect or forget what was before so beloved. Must be for that we can like such different things, and songs, and places, and people.

We’re like particles in a river. Like particles in a huge universe. Like humans.

So let’s establish some presupposition, so that I can influence your will and destiny 😀

Take some potato-gnocchi and cut some cheese you love in small pieces. I took Asiago, but you can use Mozzarella, Taleggio or whatever. Gnocchi o gnocchetti di patate e i vostri formaggi preferiti. And some parmigiano-Reggiano too, of course. Because it’s made in my land.

Then I warmed some oil and a bit of nutmeg in a pan, and melted half of the cheese, with the fire off.

Cook gnocchi in salted water, as soon as they come up floating, put them in the pan and add the rest of the cheese

Blend and serve. Optional: you can grill them in the oven at 180°C just for a few minutes. But today I did not. Se poi volete fare una cosa ancora più deliziosa, dovete metterli nel forno già caldo a 180°C e gli date una grigliatina sopra. Io avevo fame e fretta e quindi per oggi niente grigliatina 😀

It happens. I watch an old picture and a feeling goes through my skin. Non capita anche a voi ? Non vi capita di vedere qualcosa, e di provare quella sensazione… di una giornata d’estate… una giornata, magari, di tanto tempo fa? The feeling of a day in the past. A day of sun, a day when you were somebody else. You were in a different world, you were in a different mood. And you love the shape of it.

There’s nothing special in this picture. An empty cup, an empty plate. Avevo già bevuto quel meraviglioso cappuccino, già mangiato quella meravigliosa pasta e mi stavo godendo il momento di relax, prima di alzarmi e andare sulla spiaggia. It’s the moment between two things. E’ il tempo tra le cose, che ci permette di pensare alle cose e… di assaporarle. We need that “empty time”. To appreciate things. To appreciate life. To love the shape of things. To remember.

No, seriously. I tried Lindt 99% too, but the real winner is Novi 88%. Lindt 90% is less bitter then Novi 88% and this doesn’t make it right. Davvero, dopo aver mangiato Novi 88%, il Lindt 90% proprio non regge il confronto. I’m sorry dudes, at Lindt, you must do something. I also tried Novi with lemon and ginger and it’s really good. My ideal would be Novi 88% with lemon and ginger… I think it would be great, like Ed song.
