Yes, summer is zucchini and tomato time… so here are two simple recipes based on tomato sauce. The first one is a pasta dish, while the second one is a basic sauce you can use to cook many other food (meat or pasta).

Put some oil in a pan, add a little minced onion and fry, then add the zucchini pieces and cook a little, then add the tomato sauce. Cook your favourite pasta in salted water and just before it’s done, put some pieces of mozzarella in the pan

Put the cooked pasta in the pan and mix it all. You’re done.

You can make a similar sauce (with no mozzarella) and use it with pasta or to cook different kind of meat in it, for example chicken or beef.

evo oil as a base. Put some minced onion and cook very little. Then add some minced carrot (the sweetness of carrots makes it great)  and the minced zucchini (optional). Finally add the tomato sauce, a little of minced garlic and all the spices you like… for example: pepper, chili, cumin, coriander, ginger, turmeric, paprica. Remember to add a little water if it dries… you should keep it fluid. Jump into the pleasure…

.: Minor cause

Take some flour, mix it with some water and make a cream. Cut some slices of (solid) mozzarella and plunge them in the flour cream. Then cover them in grated bread and fry them in hot oil.

So I decided to make a light batter: no egg, just flour, water and a bit of sparkling wine… to fry mozzarella slices again

the batter doesn’t look so nice, but I can guarantee that it works

just put the mozzarella slices in to it, then into breadcrumb and again batter and breadcrumb… and fry

dry them from the oil excess… and it’s done

maybe you can try different type of wine or even beer.. I think beer would work good ! The key is… try different things. DIversity is the key. To everything.

.: I found

I lost almost 5 kgs during the last 5 weeks. Don’t ask me how. Only rational answer is “emotions”. I had a lot of different strong emotions. People I care for had some serious health problems. And I met some real wonderful, smart, sensitive, kind person. Emotion is what can stress you and what can make you happy. Emotion is what makes you burn calories and feel alive. So my recipe for a good diet is commit to good habits and live, live, live. Ciò che ci rende umani è l’emozione. Volete stare bene ? Vivete, ogni momento. Datevi agli altri, appassionatevi, spendetevi, innamoratevi.

So tonight I felt like cooking something tasty and kind of lustful. In a word: something fried. Fried mozzarella. It is sooooo simple, quick and yummy.

Mozzarella
Flour
Egg
Breadcrumb
Oil for frying
Salt
Pepper

Cut some mozzarella slices (1 cm). You better buy that non-watery one.

Put it in flour, and cover the slices very well

Beat the egg with some salt and pepper. Then make a double egg+breadcrumb covering: ut them in egg, then in breadcrumb, then again in the egg and again in breadcrumb. Meanwhile warm the oil very well and… fry !

Turn them quickly and often cause they will be ready very quicly and you must prevent mozzarella from melting. Then put them on some paper

I also made a small omelette with the rest of the egg and breadcrumb. And that’s it

It is ironic that even the lyrics of this song, apprently say “you can’t win”… and yet, sometimes you win even if you lose.

So what’s the moral of the story ? “When life gives you lemons, make lemonade!” I know, somebody hates this proverbial phrase… (ok, this is weird: please don’t watch this video unless you’re a fan of Portal or you love Cave Johnson voice)

but what I mean is that you must play with the cards you’ve got, and find a way to turn to lose into win.

What all this has to do with some food ? well, remember that mayonnaise (so popular!) was probably invented during a siege and the cook did it with the only things he had in there.

I just want to encourage those of you that think they can’t cook. And… I’ve taken you here even if I just made some panini with ham and mozzarella 😀
