Yes, summer is zucchini and tomato time… so here are two simple recipes based on tomato sauce. The first one is a pasta dish, while the second one is a basic sauce you can use to cook many other food (meat or pasta).
Put some oil in a pan, add a little minced onion and fry, then add the zucchini pieces and cook a little, then add the tomato sauce. Cook your favourite pasta in salted water and just before it’s done, put some pieces of mozzarella in the pan
Put the cooked pasta in the pan and mix it all. You’re done.
You can make a similar sauce (with no mozzarella) and use it with pasta or to cook different kind of meat in it, for example chicken or beef.
evo oil as a base. Put some minced onion and cook very little. Then add some minced carrot (the sweetness of carrots makes it great) and the minced zucchini (optional). Finally add the tomato sauce, a little of minced garlic and all the spices you like… for example: pepper, chili, cumin, coriander, ginger, turmeric, paprica. Remember to add a little water if it dries… you should keep it fluid. Jump into the pleasure…

I thought I could show you my tooth after they pulled it out… but it would be so creepy. Then I thought I could show you the mascarpone cheese with honey and cocoa I ate yesterday. It was good, but not nice to show.
So I waited until I could finally eat something nice: gnocchi di patate. Potato gnocchi.
I’ve been starving for 2 days… didn’t think I would miss pasta and bread so much for just 2 days. But I did. And I still have to eat only soft things… so… I saw them at the market and I thought I couldn’t miss them.
Ok this time I bought them done. But the recipe is really simple:
100 gr farina – flour
300 gr patate – potatoes
1 uovo – 1 egg
Peal the potatoes and cook them in water until they’re soft. It can take 30 minutes if you don’t cut them in pieces.
Smash them and mix with the flour and the (beaten) egg.
Don’t knead it too much, otherwise they’ll become hard. Let it soft.
Then make some pipes and cut off pieces: here are your gnocchi.
You can cook them in salted water: they’ll be ready in 30 seconds. When they are floating, it’s done.
Just add some tomatoes sauce and oil, and they’ll be perfect.

Pizza is not a food, it’s not a dish: it is a concept. Probably most italians have it in their mind as a category of reality. And I have it as a category in my blog, in fact. That’s why this evening, I decided to apply the category “pizza” to the instance”makhmar bread”. Lo so non è bello fotografare il cibo sbocconcellato, ok, però il mio scopo è farvi sbavare… farvi capire quanto possono essere buoni questi panzerotti fatti semplicemente con il pane makhmar che ho riempito di pomodoro e formaggio.
Usually “panzerotti” are fried or baked in oven, but I tried to cook them in the pan, and… I won !

Faccio piccole, piccole porzioni. Small servings are good. You don’t need to eat much if you are not very active. Quindi bastano pochi grammi. Concentratevi sul gusto. Pollo ben rosolato, un po’ di pomodoro e il mio amato pane makhmar. E poi un’insalata. Non si vede ma c’è.
E anche un po’ di prosecco fresco… non so rinunciarci, lo confesso. Come non so rinunciare alla celestiale musica di Vangelis. Assaporatela senza limiti, non ingrassa.
